Ingredients:
Cake:
8oz Flour
8oz Sugar
8oz Butter
4 Eggs
Some form of flavouring (such as 1tbsp strong coffee, 1tsp vanilla extract, grated rind of a lemon)
Icing:
6oz Icing Sugar
2oz Butter
Some milk or other liquid flavouring
Preheat oven to 180oC
Grease (and preferably line) two 7 inch sandwich tins
Mix the flour, sugar, butter, eggs and flavouring in a bowl until smooth.
Pour into tin and cook for 20-25 minutes, until the top is golden brown and springs back when gently pressed. Remove from oven, let rest for 5 minutes, then remove from tin and place on wire rack to cool.
For the icing, sieve the icing sugar into a bowl and mix in the other ingredients. Use to fill and ice the cake (jam can also be used to fill it)
